Tofu Sloppy Joes

3 English muffins, preferably whole grain -- split in

halves

1 10 1/2 oz package soft or firm low-fat tofu -- drained

1/2 cup fat-free, salt-reduced, meatless spaghetti

sauce

1 1/2 teaspoons grated Parmesan cheese

6 tablespoons shredded reduced-fat mozzarella, or

reduced-fat soy cheese

 

Toast the muffins until lightly browned.

Place the tofu in a nonstick frying pan and mash with a potato masher or fork.

Cook over high heat for 5 minutes, stirring occasionally.

Add the pasta sauce and continue cooking over high heat for 4 minutes, stirring

occasionally.

Divide the tofu mixture among the 6 muffin halves and sprinkle each with 1/4

teaspoon Parmesan cheese.

Top each with a tablespoon of mozzarella cheese.

Place on a microwave-safe plate and cook on high in microwave for 21/2 minutes

or until cheese has melted.
