" --Dorothy Parker * Exported from MasterCook * Cucumber Salad Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cucumbers -- washed and sliced thin 1 small onion -- chopped 2 tablespoons fresh parsley 2 tablespoons fresh mint 2 tablespoons fresh basil 2/3 cup cider vinegar 2 tablespoons sugar 1 tablespoon oil 3 tablespoons water 2 hard-boiled eggs -- sliced Combine cucumbers, onion, and herbs. Mix vinegar, sugar, oil, and water for dressing; toss with cucumbers. Let sit at room temperature for one hour; then refrigerate until time to serve. Garnish with hard-boiled eggs. - - - - - - - - - - - - - - - - - - NOTES : You can use dried herbs if you must, but the salad will taste best with fresh; if you use the dried variety, you need only about one teaspoon of each.
