Re request re beet greens

This is my home cooking ,never measured ,never made it exactly the same

twice recipe for greens:

Michelle's Saag

 

1 bunch of spinach washed well and chopped or 1/2 bunch of spinach and 1/2

bunch of chopped mustard greens or 1 bunch of chopped beet greens or 1

bunch of chopped collard greens plus or minus spinach.

1 tbsp minced garlic

1/2 tsp brown mustard seeds

1/2 tsp cumin seed

1/2 tsp turmeric(gives a buttery taste)

1 serrano chile scored down the middle with seeds removed and discarded to

make it mild

optional-1/4 minced onion to cook with the garlic

2 heaping tbsp corn meal

2tbsp cooking oil

 

Heat oil in a pan on medium heat.when hot add mustard seed and cumin

seed.Cover and wait a few sec for mustard seeds to start popping and take

off the heat so the seeds don't burn.Add the garlic or garlic and onion and

chili pepper.Cook a short while .Sprinkle on the turmeric.Add the washed

chopped greens.Stir fry to desired state of doneness.Sprinkle cornmeal on

the greens and cook longer til the cornmeal thickens up and absorbs the

juices and flavor.Remove the serrano pepper.

I find this addicting.I don't overcook or puree this like some do

because I enjoy the texture.
