vegan quiche

I have made a vegan frittata, which is kind of like quiche.

I don't have my recipe here at work, but I know you take soft tofu, mix with

water, turmeric (just a pinch, probably for color) and lemon juice. I know

my recipe uses diced potatoes and leek, you precook the potato, mix the leek

and potato and tofu and pour into a baking dish. The tofu firms up during

baking. My mom loved it when I made it for her.

 

I will bring in the recipe tomorrow

Hi all,

 

I was curios if Vegan quiche exists?

 

I have a vegan friend who used to make

quiches.. but not now.. I know I've made

them with soy milk, egg beaters and soy

cheese, but the egg beaters of course

wouldn't work for him.

 

Any suggestions?
