I did this today for lunch. I washed the artichoke, trimmed the stem (I actually like the stem so I left it on) and trimmed the leaves. I made sure to leave a little water in the artichoke from the rinsing and wrapped it in wax paper and then wrapped in plastic wrap (I don't like the idea of the plastic leaching stuff) I micro'd on high for 8 minutes and let it sit for about 5 minutes. Here's the text: Microwaving Artichokes: To cook an artichoke fast, microwave it upside down in a Pyrex measuring cup with a little water in the bottom (add lemon juice and olive oil if you like).
