Guest guest Posted April 11, 2000 Report Share Posted April 11, 2000 * Exported from MasterCook Buster * Frankly Fake Feta Recipe By : Cooking With PETA Serving Size : 2 Preparation Time : Categories : Cheese sub Analog Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound extra-firm regular or silken tofu 1 cup -- water 1/2 cup light miso 2 tablespoons lemon juice or white wine vinegar 1 teaspoon -- salt Cut the tofu into slices or cubes. Combine the remaining ingredients to make a marinade, and pour over the tofu. Keep this refrigerated in a covered jar for up to three weeks, shaking the jar every day. Use in salads. Try this " feta " in salads and sandwiches, or just to nibble on by itself. You can also use low-fat tofu in this recipe and still get delicious results. I blended some with a couple of garlic cloves in a flour-based sauce for a great vegan Alfredo-type sauce.
