Guest guest Posted April 11, 2000 Report Share Posted April 11, 2000 * Exported from MasterCook Buster * Artichoke Tofu Pasta Recipe By : Cooking With PETA Serving Size : 4 Preparation Time : Categories : Pasta Vegan Main Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound tri-colored pasta -- (or elbow macaroni) 1/2 medium onion -- chopped 2 cloves garlic 1 tablespoon olive oil 1/4 pound firm or extra-firm tofu -- diced 1 can artichoke hearts -- quartered (14-oz) 1 can diced tomatoes -- (12-oz) 1 can tomato sauce -- (8-oz) Cook the pasta according to the package directions. While the pasta is cooking, saute' the onion and garlic in the olive oil for 1 to 2 minutes. Add the diced tofu and saute' for 2 minutes, then add the artichokes, tomatoes, and tomato sauce. Drain the pasta and combine all the ingredients. Try this with the Frankly Fake Feta I posted instead of the plain tofu. - N.B.
