Chocolate Tofu Berry Whip

1 10 1/2 oz package firm or extra-firm low-fat tofu

1 cup raspberries or any other berries -- frozen and

unsweetened

1/2 cup fruit-sweetened blackberry jam

1 teaspoon vanilla extract

1 teaspoon fresh lemon juice

1 tablespoon cocoa powder

 

Place the tofu, berries, jam, vanilla, lemon juice, and cocoa powder in a food

processor. Process until smooth.

Spoon into parfait glasses and serve.
