Guest guest Posted April 11, 2000 Report Share Posted April 11, 2000 * Exported from MasterCook * Banana Pancakes Recipe By :Earl Mindell's Soy Miracle Cookbook Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup all-purpose flour 1/2 cup soy flour, preferably defatted 1 teaspoon salt 1 3/4 teaspoons baking powder 3 tablespoons soybean oil 1 1/4 cups plain soy milk 2 bananas -- thinly sliced fresh sliced fruit or maple syrup (optional) Sift together the flours, salt, and baking powder. In a separate bowl, mix the oil and milk. Add quickly to the dry ingredients, stirring just to blend. Add the bananas and stir into the batter with just a few strokes. Pour batter by 1/4 cupfuls onto a lightly oiled griddle and cook for 2 to 3 minutes or until bubbles begin to form on the pancakes. Then flip and cook on the other side for 1 to 2 minutes.
