I play around with the herbs - and always include garlic. * Exported from MasterCook * Herbed Tofu Pate Recipe By :Earl Mindell's Soy Miracle Cookbook Serving Size : 36 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound firm tofu -- drained 1 tablespoon white miso 1 tablespoon tahini 1 teaspoon umeboshi plum paste 1 teaspoon fresh lemon juice 1 tablespoon minced chives 1 tablespoon minced fresh basil Drain excess water from the tofu by either slicing and pressing under a weight or wringing out in a clean cotton towel. Place all ingredients in a mixing bowl and mash thoroughly until smooth. Press the mixture into a mold and refrigerate for several hours or overnight to let the flavors blend. Slice or scoop out and serve on sandwiches or crackers for a tasty, lower-fat alternative to a cream cheese spread.
