Guest guest Posted April 9, 2000 Report Share Posted April 9, 2000 * Exported from MasterCook * Southwest Scrambles Recipe By :Cooking with PETA Serving Size : 2 Preparation Time :0:00 Categories : Cooking with PETA Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium onion -- chopped 2 cloves garlic -- crushed 2 tablespoons oil 4 ounces mushrooms -- sliced 1 green bell pepper -- diced 1 chile pepper -- seeded & diced 1 pound firm or extra-firm tofu -- patted dry and crumbled 1/2 teaspoon salt 1 teaspoon curry powder salsa Saute the onion and garlic in the oil until the onion is soft. Add the mushrooms, cover, and continue to saute until the mushrooms are soft. Add the green pepper and the chile pepper, and cook for a few more minutes. Add the tofu, salt, and curry powder, and mix well. Continue to cook until the tofu is heated. Serve with salsa on top with toast on the side or in a heated tortilla. Source: " Typed by Karen C.
