Aioli

Amount Measure Ingredient -- Preparation Method

2 ounces soft regular or silken tofu (about 1/4

cup)

2 heads garlic -- roasted (about 1/4 cup)

2 teaspoons fresh lemon juice

pinch cayenne

1/4 teaspoon salt, or to taste

freshly ground pepper

1/4 cup extra-virgin olive oil

 

In a blender, puree the tofu with the garlic.

Add the lemon juice, cayenne, salt, and pepper and blend.

With the motor running, slowly add the olive oil in a thin, steady stream.

Scrape the aioli into a small bowl. Cover tightly with plastic wrap and

refrigerate for 1 hour, up to overnight, to allow the flavors to meld.
