Creamy Ranch Dressing

1 scallion, white and green parts -- cut in 1-inch lengths

2 large garlic cloves

2 teaspoons freshly squeezed lemon juice

1 tablespoon rice vinegar

1/2 teaspoon rice syrup

9 to 10 1/2 ounces soft silken or regular tofu

1 teaspoon dried oregano

1 tablespoon canola oil

salt and freshly ground pepper

 

In the bowl of a food processor, combine the scallion, garlic, lemon juice, rice

vinegar, and rice syrup. Process by pulsing 5 to 6 times, then let the blade

run about 10 seconds, until all the ingredients are very finely chopped. Scrape

down the sides of the bowl. Add the tofu and process until the dressing is

pureed. Add the oregano and oil and process just until they are blended into

the dressing. Season to taste with salt and a generous amount of freshly ground

pepper.

Let the dressing sit at least 10 minutes, up to 1 hour, to let the flavors meld.

It keeps in a tightly closed container in the refrigerator for up to 3 days.
