Tammy: Here are 3 recipes I found for you. A couple of them will need to

be " veganized " . None call for cream cheese, as you mentioned, but you can

substitute Nayonnaise for real mayonnaise in one recipe and use tofu sour

cream in the other along with soy milk instead of dairy milk. Someone

posted the Tofu Spinach Dip on Veg-Recipes -- thanks to whoever that was.

You could add artichokes to that one.

 

You can find commercial tofu " sour cream " and " cream cheese " if you don't

want to make them. Tofutti makes some and the same company that makes

" Vegi-Slices " does too.

Spinach and Artichoke Dip

Amount Measure Ingredient -- Preparation Method

1 package frozen chopped spinach -- thawed, pressed

1 can artichoke hearts -- drained

1 cup mayonnaise

1 teaspoon fresh dill -- snipped

1 clove garlic -- minced

1 tablespoon fresh lemon juice

1/2 teaspoon salt

1/4 teaspoon pepper

 

Pulse spinach and artichokes in food processor until coarsely chopped.

Add remaining ingredients and churn until smooth.

Mound into serving bowl, and accompany with crudite.

Tofu Spinach Dip

Amount Measure Ingredient -- Preparation Method

1/2 pound tofu

3 tablespoons mustard or mayonnaise

1 10 oz package frozen spinach (or fresh) -- cooked

1 large onion -- chopped

2 cloves garlic -- minced

2 tablespoons oil

1 dash pepper and tamari to taste

 

Saute onions and garlic in oil. Pour into blender, add remaining

ingredients and blend well. Serve with crackers or raw vegetables.

Spinach Dip

Amount Measure Ingredient -- Preparation Method

1 teaspoon olive oil

1 cup chopped onion

1 teaspoon minced garlic

1 box (10 oz) spinach, frozen -- thawed and drained

1/2 cup fat-free sour cream

1/4 cup skim milk

2 tablespoons light mayonnaise

1 tablespoon white vinegar

1 teaspoon salt

1/2 teaspoon dried dill weed

1/4 teaspoon ground red pepper -- (cayenne)

8 ounces waterchestnuts, canned -- drained and chopped

dippers: assorted cut-up vegetables

 

 

Heat oil in nonstick skillet over medium-high heat. Add onions and garlic

and sauté‚ until onions

are translucent, about 3 minutes. Transfer to a food processor.

 

Add remaining ingredients, except the water chestnuts, and process until

almost smooth. Remove

processor blade and stir in water chestnuts. Scrape into serving bowl.

 

To make bread bowl: Cut a deep circle in top of a 6-inch round loaf,

leaving a 1«-inch border.

Lift out cut area (cut up for dippers), then scoop out dough, leaving a

1«-inch shell.
