Lemon Cream Topping

1 1/2 cups extra-firm silken tofu -- well drained

1 1/2 tablespoons frozen lemonade concentrate

2 tablespoons tahini

1 tablespoon honey (or a natural sweetener)

1 tablespoon corn oil

 

Combine all of the ingredients in a food processor or blender and puree until

smooth and well blended. Chill at least 1 hour before serving.

cakes, or pies. "
