Roasted Honey Mustard Carrots

1 pound carrots

1 tablespoon olive oil -- or vegetable oil

2 tablespoons honey

2 tablespoons water

1 tablespoon vinegar -- any kind

1 tablespoon Dijon mustard

1/2 teaspoon salt

1/2 teaspoon freshly ground pepper

 

Preheat oven to 400 °F. Brush a wide, shallow baking sheet with oil.

 

Peel carrots and cut them into sticks about 3 inches by 2 inches. Place on

the baking sheet and roast for 10 minutes.

 

Meanwhile, stir together honey, water, vinegar, mustard, salt, and pepper.

Remove carrots from oven and stir mustard sauce into them. Roast for 10

minutes more, or until carrots are tender.
