Guest guest Posted March 31, 2000 Report Share Posted March 31, 2000 * Exported from MasterCook * Green Chile Hominy Recipe By :Vegetarian Express Lane Cookbook, Sarah Fritschner Serving Size : 4 Preparation Time :0:00 Categories : Vegetarian Express Lane Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil -- or vegetable oil 3 cloves garlic -- minced 1 medim onion -- chopped 1 teaspoon ground cumin 1/2 teaspoon ground coriander 1 29 oz can hominy 1 4 oz can chopped mild green chiles salt & freshly ground pepper to taste crushed red pepper to taste minced green onions -- (optional) grated Cheddar or Monterey Jack cheese -- (optional) Heat oil in a wide skillet over medium heat and add garlic, onions, cumin, and coriander. Cook, stirring occasionally, over medium heat, until onions are soft, about 10 minutes. Add hominy and chiles and cook to heat through and evaporate liquid.
