Green Chile Hominy

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil -- or vegetable oil

3 cloves garlic -- minced

1 medim onion -- chopped

1 teaspoon ground cumin

1/2 teaspoon ground coriander

1 29 oz can hominy

1 4 oz can chopped mild green chiles

salt & freshly ground pepper to taste

crushed red pepper to taste

minced green onions -- (optional)

grated Cheddar or Monterey Jack cheese --

(optional)

 

Heat oil in a wide skillet over medium heat and add garlic, onions, cumin,

and coriander. Cook, stirring occasionally, over medium heat, until onions

are soft, about 10 minutes.

 

Add hominy and chiles and cook to heat through and evaporate liquid. Taste

and season with salt, pepper, and red pepper, if desired. Sprinkle with

green onions and cheese, if desired.
