I baked these today for my dad, who is diabetic. I found the recipe at

http://www.diabeticgourmet.com. They have a whole index of recipes and

most of them look really good. This one is for a bar cookie. Great way

of using up that last 1/2 cup of applesauce in the jar. Taste great too,

I just tasted one.

Applesauce Bar Cookies (Diabetic)

1 3/4 cups cake flour -- sifted

1/2 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground allspice

1/8 tsp ground cloves

1/2 tsp salt

1/4 cup margarine -- softened

3/4 cup sugar -- OR

8 pkts Sweet One sweetener + 1/4 c + 1/8 c. sugar

1 egg

1/2 cup applesauce

1/2 cup raisins mixed with a little flour

 

Preheat oven to 350°F. Prepare an 11x7 " baking pan with some PAM. Sift

together the flour, baking soda, spices & salt. Cream margarine &

sugars. Add egg and margarine mixture and beat till fluffy. Alternately

add dry ingredients and applesauce. Stir, just to blend. Add raisins.

Turn into prepared pan and bake for 30 minutes at 350°F. Let cool for 10

minutes and then cut into bars.

 

Diabetic exchange: 1 bar = 1 bread exchange and 1/2 fat exchange

 

Nutritional information per bar: 80 calories, 2g fat, 1g Protein
