Apple Crisp with Apple Cream

Filling:

8 Granny Smith apples -- peeled,cored, and sliced

1 tablespoon fresh lemon juice

1 teaspoon cinnamon

3/4 cup quick cooking oats

3/4 cup unbleached all-purpose flour

3/4 cup firmly packed brown sugar (or a natural

sweetener)

2 tablespoons corn oil

Topping:

3/4 cup soft silken tofu -- well drained

3/4 cup applesauce

1 teaspoon vanilla extract

1 tablespoon sugar (or a natural sweetener(

 

Preheat the oven to 350F. In a large bowl combine the apples with the lemon

juice and the cinnamon and arrange them in a lightly oiled shallow baking dish.

In a bowl combine the oats, flour, brown sugar, and oil. Sprinkle the mixture

over the apples, and bake for 45 minutes, or until the top is lightly browned.

To make the topping, combine the tofu, applesauce, vanilla, and sugar in a small

bowl and mix well. Transfer the topping to a small serving bowl, and pass

separately with the warm apple crisp.
