According to the book, that is what it is. I cut that amount in half when I made it but forgot to mention that in the notes of the recipe. Here is the corrected recipe (I put a different amount of salt in place of the 1 tbsp). That is what it should be - 1 tbsp is alot for 4 cups of sauce. Also, the recipe calls for 1/2 tsp of black pepper which doesn't seem like a lot but it was quite spicy but my 4 year old loved it. * Exported from MasterCook * Vita's Tomato Sauce (adapted) Recipe By : A Taste of the Treasure Coast Serving Size : 4 Preparation Time :0:00 Categories : Sauces And Marinades Tomatoes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup 100% pure olive oil -- * see note 1 sm onion -- finely chopped 3 cloves garlic -- minced** 1 32 oz can imported crushed tomatoes 1 tsp salt -- or more to taste 1 tbsp sugar 1/2 tsp pepper 1 1/2 tsp oregano 5 leaves fresh basil 1/4 cup dry white wine -- *** see note Combine oil, onin and garlic in a medium saucepan and cook over medium heat until slightly browned. Add remaining ingredients and cook over medium heat 30 minutes. Serve over pasta. - - - - - - - - - - - - - - - - - - NOTES : Risa's notes: * I used 1/2 the amount of oil. Felt that 1/4 cup was an awful lot. Didn't spoil the taste. ** The recipe called for 1 clove. That is not enough for me so I added another 2 cloves. *** I didn't have white wine so I used some broth. I would lessen the amount of black pepper if I make this again. It didn't seem like a lot when I read the recipe but it tasted quite peppery when I made it.
