Guest guest Posted March 29, 2000 Report Share Posted March 29, 2000 * Exported from MasterCook * Blueberry Banana Bread Recipe By :366 Simply Delicious Dairy-Free Recipes - Robin Robertson Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups unbleached all-purpose flour 1 3/4 teaspoons baking powder 1/4 teaspoon salt 2 very ripe bananas 1/2 cup vanilla soy milk 1/4 cup corn oil 1/2 cup sugar (or a natural sweetener) 1/2 cup soft silken tofu -- drained 1 teaspoon vanilla extract 1 cup frozen blueberries Preheat the oven to 375 degrees. Lightly oil a loaf pan and set aside. Sift the flour, baking powder, and salt into a large bowl and set aside. Place the bananas, soy milk, oil, sugar, tofu, and vanillla in a food processor and blend until smooth. Add the wet ingredients to the dry ingredients and mix well. Fold in the frozen blueberries. Fill the prepared pan with the batter, and bake for 50 minutes, or until a toothick inserted into the center comes out clean. Allow to cool in pan before slicing.
