Blueberry Banana Bread

2 cups unbleached all-purpose flour

1 3/4 teaspoons baking powder

1/4 teaspoon salt

2 very ripe bananas

1/2 cup vanilla soy milk

1/4 cup corn oil

1/2 cup sugar (or a natural sweetener)

1/2 cup soft silken tofu -- drained

1 teaspoon vanilla extract

1 cup frozen blueberries

 

Preheat the oven to 375 degrees. Lightly oil a loaf pan and set aside. Sift

the flour, baking powder, and salt into a large bowl and set aside. Place the

bananas, soy milk, oil, sugar, tofu, and vanillla in a food processor and blend

until smooth. Add the wet ingredients to the dry ingredients and mix well.

Fold in the frozen blueberries. Fill the prepared pan with the batter, and bake

for 50 minutes, or until a toothick inserted into the center comes out clean.

Allow to cool in pan before slicing.

 

Description:

" Use bananas that are almost too ripe to eat - they make the sweetest

banana bread. Be sure to use frozen blueberries, or you may end up

with a purple dessert. "
