Sweet Potato Pie

Crust

1 cup unbleached all-purpose flour

pinch salt

1/2 cup chilled margarine -- cut into 1 " pieces

1 1/2 tablespoons cold water

Filling

1 cup cooked mashed sweet potatoes

1 tablespoon margarine -- softened to room temp.

1/2 cup soft silken tofu -- drained

OR

2 eggs

1 cup vanilla soy milk

1 1/4 cups firmly packed light brown sugar (or a

natural sweetener)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon salt

1/4 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1 cup Tofu Whipped Cream for garnish

 

To make the crust, combine the flour and salt in a food processor. Blend in the

margarine with short pulses, until the mixture resembles coarse crumbs. With

the machine running, add the water through the feed tube and blend until the

dough just starts to hold together. Transfer the dough to a work surface and

flatten to form a disc. Wrap the dough in plastic wrap and refrigerate at least

1 hour.

To make the filling, in a large mixing bowl, combine the sweet potatoes and

margarine with an electric mixer. Blend in the tofu. Add the soy milk, sugar,

vanilla, cinnamon, salt, ginger, and nutmeg, mixing until well blrnded. Preheat

the oven to 350 degrees. Roll out the dough on a lightly floured surface to fit

a 9-inch pie plate. Fit the dough into the pie plate and trim and flute the

edges. Pour the filling into the crust and bake for 45 to 50 minutes, or until

firm. Serve garnished with a dollop of Tofu Whipped Cream on each slice.
