Tofu Whipped Cream

1 cup extra-firm silken tofu -- well drained

1/4 cup honey (or a natural sweetener)

1 tablespoon safflower oil

1 tablespoon almond butter (optional)

1 teaspoon vanilla extract

pinch salt

 

Combine all of the ingredients in a blender and process until smooth. Transfer

to a container, cover, and refrigerate several hours to firm up.

addition of almond butter adds firmness and flavor. "
