Guest guest Posted March 27, 2000 Report Share Posted March 27, 2000 I'll send the accompanying recipe fpr Tofu Whipped Cream- * Exported from MasterCook * Chocolate Rum Pie Recipe By :366 Simply Delicious Dairy-Free Recipes - Robin Robertson Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Crust 1 cup unbleached all-purpose flour 1/8 teaspoon salt 1/2 cup chilled stick margarine -- cut into small pieces 3 tablespoons cold water Filling 5 ounces tofu chocolate -- chopped 1/4 cup carob soy milk -- heated 1/4 cup dark rum 1 teaspoon instant coffee granules 1 teaspoon vanilla extract 1/8 teaspoon salt 1 cup Tofu Whipped Cream Tofu chocolate curls for garnish Preheat the oven to 375F. Place the flour and salt in a food processor and combine. Add the margarine and process until crumbly. Processing slowly, add the water until a dough ball forms. On a lightly floured surface, roll out the dough to fit a 9-inch pie plate, and arrange in the pie plate, trimming the dough and fluting the edges. Prick holes in the bottom of the dough with a fork. Line the crust with aluminum foil and fill with dried beans. Bake for 10 minutes, or until the crust is set. Discard the foil and beans. Continue baking until the crust is light brown, 8 to 10 minutes longer. Remove the crust from the oven, and set aside. Melt the chopped chocolate in the top of a double boiler set over gently simmering water. Stir in the soy milk, rum, coffee, vanilla, and salt. Remove from the heaat and cool to room temperature. Fold the whipped cream into the chocolate mixture. Spoon the filling into the prepared crust, and smooth the top evenly. Refrigerate at least 2 hours to firm up. Just prior to serving, sprinkle the top of the pie with the chocolate curls. Refrigerate any leftovers. Description: " For more chocolate flavor, substitute a pie crust made from carob cookie crumbs.
