Guest guest Posted March 27, 2000 Report Share Posted March 27, 2000 * Exported from MasterCook * Chocolate Banana Pie Recipe By :366 Simply Delicious Dairy-Free Recipes - Robin Robertson Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- CRUST 1 cup unbleached all-purpose flour 2 tablespoons sugar pinch salt 1/4 cup chilled margarine -- cut into small pieces 1 tablespoon water FILLING 1 1/2 cups firm silken tofu -- well drained 2 ripe bananas 1/4 cup sugar (or a natural sweetener 2 tablespoons margarine -- at room temperature 2 tablespoons lemon juice 1 teaspoon vanilla extract 2 ounces tofu chocolate (available in natural food stores) Preheat the oven to 350F. Lightly oil a 9-inch pie plate or coat with nonstick spray and set aside. To make the crust, combine the flour, sugar, and salt in a food processor. Add the margarine with short pulses until the mixture resembles coarse crumbs. Add the water and mix until a dough ball begins to form. Transfer the dough to the prepared plate and press gently into the bottom and sides. Line the crust with aluminum foil, and fill with dried beans. Bake for 10 minutes, or until the crust is set. Discard the foil and beans. Continue baking until the crust is light brown, 8 to 10 minutes longer. Remove the crust from the oven, and set aside. To make the filling, put the silken tofu, bananas, sugar, softened margarine, lemon juice, and vanilla into a food processor and mix until well combined. Spoon the filling into the crust. Melt the tofu chocolate in a double boiler over simmering water. Pour the melted chocolate over the filling and swirl with a thin spatula or knife to create a light and dark swirled pattern in the batter. Bake for 30 minutes, or until firm. Cool to room temperature before refrigerating.
