Guest guest Posted March 27, 2000 Report Share Posted March 27, 2000 After all, one can never have too many cheesecake recipes... * Exported from MasterCook * Tofu Cheesecake Recipe By :366 Simply Delicious Dairy-Free Recipes - Robin Robertson Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups graham cracker crumbs 2 tablespoons sugar 2 tablespoons margarine -- melted 2 1/2 cups firm silken tofu -- well drained 3/4 cup soy milk 1/4 cup corn oil 1 tablespoon cornstarch 1 teaspoon vanilla extract fruit topping (optional) Preheat the oven to 350F. Lightly oil a 9-inch springform pan, or coat with nonstick cooking spray. Place the crumbs, sugar, and margarine in the bottom of the pan, and toss with a fork until blended. Press the crust into the bottom and sides of pan and bake for 5 minutes. Set aside. Combine the tofu, soy milk, oil, cornstarch, and vanilla in a food processor and blend until smooth. Pour the filling into the prepared crust and bake for 30 minutes, or until firm. Remove from the oven let the cake come to room temperature. Leave it plain or top with a fruit topping of your choice, such as whole fresh strawberries or sliced fresh strawberries combined with fruit-sweetened strawberry jam.
