Guest guest Posted March 25, 2000 Report Share Posted March 25, 2000 ---------- Recipe via Meal-Master v8.06 Title: Neat Loaf Categories: Main dish, Loaf Yield: 8 servings 2 c Seitan; ground* 12 oz Firm tofu; drained, crumbled 1 tb Soy sauce 1 tb Vegetarian -worcestershire sauce 1 sl Bread, crumbled 2 Eggs**, slightly beaten, opt 1/4 ts Ground cloves 1/8 ts Nutmeg; grated 3/4 ts ;pepper 3/4 ts ;salt 2 tb Vegetable oil 1/2 c Celery; minced 1 Onion; diced 1 Carrot; diced 1/4 c Parsley; chopped *Such as Meat from Wheat **Or, Ener-G Egg Replacer to substitute for 2 eggs Preheat oven to 350 degrees. Mash together seitan, tofu, bread crumbs, eggs (or egg replacer), if desired, and seasonings. Set aside. Heat oil in a skillet and lightly saute celery, onion and carrot. Stir in parsley and remove from heat. Add vegetables to tofu mixture and combine well. Shape into a loaf, place in an oiled 9- x 5-inch loaf pan and bake, uncovered, for 1 hour, or until well browned. Serves 6-8.
