White Bean-Pesto Dip

1 19 oz can white beans -- rinsed and drained

1/3 cup coarsely chopped basil

3 tablespoons fresh lemon juice

1 tablespoon + 1 teaspoon extra-virgin olive oil

1 large garlic clove

1/2 teaspoon salt

 

This just might be the world's fastest dip--and it's full of fiber, protein, and

flavor. Any white bean will do, so it's versatile to boot. Make it a few hours

before serving so the flavors can really develop; then serve it with crisp fresh

veggies.

In a blender or food processor, puree the beans, basil, lemon juice, oil,

garlic, and salt. Let stand at room temperature, covered, until the flavors are

blended, 2-3 hours.s
