Any white bean will do, so it's versatile to boot. Make it a few hours before serving so the flavors can really develop; then serve it with crisp fresh veggies. In a blender or food processor, puree the beans, basil, lemon juice, oil, garlic, and salt. Let stand at room temperature, covered, until the flavors are blended, 2-3 hours.s - - - - - - - - - - - - - - - - - - - Per serving: 452 Calories (kcal); 1g Total Fat; (2% calories from fat); 32g Protein; 82g Carbohydrate; 0mg Cholesterol; 288mg Sodium Food Exchanges: 5 1/2 Grain(Starch); 2 Lean Meat; 0 Vegetable; 0 Fruit; 0 Fat; 0 Other Carbohydrates Nutr.
