Tahini Lemon Sauce

Amount Measure Ingredient -- Preparation Method

1/2 cup tahini

1/2 cup firm silken tofu -- drained

1/4 cup minced scallion

1/4 cup minced fresh parsley, or 1 tablespoon

dried

1/2 teaspoon minced garlic

1/3 cup lemon juice

1/2 teaspoon salt

1/8 teaspoon cayenne

1/8 teaspoon turmeric

water

 

Place all of the ingredients in a food processor and process until well blended.

Slowly add up to 1/2 cup water until a smooth consistency is reached. Transfer

to a saucepan and bring to a simmer over low heat, stirring occasionally. Be

careful not to boil. Adjust the seasonings.

 

Description:

" This creamy sauce does wonders to perk up steamed vegetables. It's

also fabulous tossed with hot pasta. "
