Tastes Like Bearnaise Sauce

1/2 cup white wine

1/4 cup cider vinegar

1/4 cup minced shallots

2 tablespoons minced fresh tarragon, or 1 teaspoon dried

1 3/4 cups firm silken tofu -- drained

1 tablespoon corn oil

2 tablespoons lemon juice

1/8 teaspoon turmeric

1/8 teaspoon cayenne

 

Combine the wine, vinegar, shallots, and tarragon in a small saucepan over

medium-high heat and bring to a boil. Reduce the heat to low and simmer until

reduced by half. Transfer the mixture to a food processor, add the tofu, oil,

lemon juice, salt, turmeric, and cayenne and process until smooth. Adjust the

seasonings.

 

Description:

" This cholesterol-free version of bearnaise sauce is a good choice for

sauteed seitan chunks or steamed green vegetables. "
