May I comment on your suggestion for using fat-free Half n Half? I read

recently that fat-free Half n Half is just fat-free milk with a pinch of

thickener added to give it more of the consistency you'd expect from Half n

Half. The last time I was shopping in the diary section of my super market I

saw fat-free Half n Half on the shelf. It cost about a dollar more than

fat-free milk. I'd suggest using the latter in this recipe - the cheese will

help thicken it and you'll save a buck!

Fettuccine with Mushroom-Gorgonzola Sauce

Amount Measure Ingredient -- Preparation Method

2 tbsps olive oil

1 Onions -- finely chopped

4 lg garlic cloves -- minced

1 lb crimini mushrooms -- sliced

2 red bell peppers -- thinly sliced

1 lb fettuccine

1 c fat-free half and half -- * see note

3 ozs Gorgonzola cheese -- crumbled

1/2 c chopped fresh chives

4 tbsps chopped fresh parsley

2 tbsps chopped fresh basil

 

* Original recipe called for whipping cream.

 

Heat oil in heavy large skillet over medium heat. Add onions and garlic.

Sauté until onions are tender, about 8 minutes. Add mushrooms and bell

peppers. Sauté until tender, about 20 minutes. (Can be prepared 8 hours

ahead. Cover and refrigerate. Rewarm before continuing.)

 

Cook fettuccine in large pot of boiling salted water until just tender but

still firm to bite. Drain well; return pasta to pot.

 

Meanwhile, add whipping cream and cheese to mushroom mixture. Simmer

gently over medium heat until cheese melts, stirring occasionally, about 4

minutes. Stir in chives, parsley and basil. Add sauce to pasta; toss to

coat. Season pasta to taste with salt and pepper. Transfer to bowl and

serve.
