Boston Baked Soybeans

2 teaspoons vegetable oil

2 carrots -- chopped

2 onions -- chopped

1 garlic clove -- minced

1 14 oz can crushed tomatoes (no salt added)

1 15 oz can soybeans -- rinsed and drained

1/4 cup molasses or honey

1 tablespoon cider vinegar

1/2 teaspoon dry mustard

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/8 teaspoon ground cloves

 

Note: Soybeans are quite high in fat, so they impart a rich texture, if you

prefer, use navy, great Northern, or any small white bean--you'll cut the total

fat by about 14 grams.

Preheat the oven to 325F. In a medium nonstick skillet, heat the oil. Add the

carrots, onions, and garlic; cook, stirring as needed, until softened, 8-10

minutes. Stir in the tomatoes; cook, covered, until slightly thickened, about 5

minutes. Stir the soybeans, molasses, vinegar, mustard, salt, pepper, and

cloves.

Transfer the mixture to a shallow 1 1/2-quart casserole. Bake, covered with

foil, about 1 hour; uncover and bake until the beans are very tender and the

mixture is quite thick, about 30 minutes longer.
