Preheat the oven to 325F. In a medium nonstick skillet, heat the oil. Add the carrots, onions, and garlic; cook, stirring as needed, until softened, 8-10 minutes. Stir in the tomatoes; cook, covered, until slightly thickened, about 5 minutes. Stir the soybeans, molasses, vinegar, mustard, salt, pepper, and cloves. Transfer the mixture to a shallow 1 1/2-quart casserole. Bake, covered with foil, about 1 hour; uncover and bake until the beans are very tender and the mixture is quite thick, about 30 minutes longer. - - - - - - - - - - - - - - - - - - - Per serving: 486 Calories (kcal); 24g Total Fat; (40% calories from fat); 40g Protein; 37g Carbohydrate; 0mg Cholesterol; 271mg Sodium Food Exchanges: 2 Grain(Starch); 4 1/2 Lean Meat; 1 Vegetable; 0 Fruit; 2 Fat; 0 Other Carbohydrates Nutr.
