Guest guest Posted March 22, 2000 Report Share Posted March 22, 2000 * Exported from MasterCook * Tempeh Sloppy Joes Recipe By :Versatile Vegetarian - Weight Watchers Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 pound tempeh -- diced 3 garlic cloves -- minced 2 teaspoons olive oil 1 green bell pepper -- seeded and chopped 1 onion -- chopped 1 cup tomato sauce 1 teaspoon chili powder 1/2 teaspoon dried oregano 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 4 whole wheat hamburger buns In a medium saucepan, combine the tempeh, half of the garlic, and 2 cups water; bring to a boil. Reduce the heat and simmer 10 minutes. Drain and pat the tempeh dry. In a large nonstick skillet, heat the oil. Add the pepper, onion, and the remaining garlic; cook, stirring as needed, until softened, 8-10 minutes. Stir in the tempeh; cook, breaking up the tempeh with a wooden spoon, 3-4 minutes. Stir in the tomato sauce, chili powder, oregano, salt, pepper, and 1/2 cup water; cook, stirring as needed, until thickened, 8-10 minutes.
