Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 tablespoon safflower oil

1 pound extra-firm tofu -- cut into 1/2-inch thick slices

4 tablespoons low-sodium tamari

3 tablespoons tahini

1 cup hot soy milk

2 tablespoons minced fresh parsley, or 1 teaspoon dried

Preheat the oven to 250F. Heat the oil in a large skillet over medium-high

heat. Add the tofu slices and saute until golden brown, about 2 minutes on each

side. Add 2 tablespoons of the tamari, turning to coat. Place the tofu in the

oven to keep warm. In a food processor, combine the tahini and the remaining 2

tablespoons tamari. With the machine running, slowly stream in the hot soy

milk. Transfer the mixture to a small saucepan and simmer over low heat for 2

minutes, stirring constantly. To serve, place the tofu slices on serving

plates, and top with the sauce. Sprinkle with the minced parsley.
