Dried Beans or Hominy

Hi,

I thought that somebody might have some insight on this: I bought

some dried hominy grits to make a chilli last week, and after soaking it

overnight I still thought it was too hard to eat. I made the chilli anyway

and let it simmer for about an hour (although the recipe called for 15

minutes). The hominy was still tough....I don't have a pressure cooker, but

I thought that I could get away with just soaking them. This has happened

before with dried kidney beans...It was awful. I really would like to find

a way to get this to work since the canned stuff has a lot of salt in it.

Hope you can help......Oh BTW thanks for the Seitan info.......!

It's possible the stuff was too old; I've had this problem with beans as

well. No amount of soaking or cooking made them tender. Blecch.
