It was delicious with Colin's homemade spelt bread. 2 tablespoons Sunflower Oil 1 Leek 5 Garlic cloves 1 chopped red chilli (optional) - we did not include this. 4 or 5 sticks of celery, finely chopped 1 tablespoon flour Three handfuls of Spinach 2 cups of soya milk 1 cup of water Salt to taste - we use Lo-Salt. A little white tine (optional) - we did not use this. Fry the leek, garlic and chillif if using, in the oil for a few minutes. Add the celery and cook for another few minutes until it starts to soften. Add the flour and mix well, then throw in the spinach and mix. Add the soya milk, water, salt and wine, if using. Stirring continuously, bring to a simmer then switch off and remove from the heat. Cover and leave for a few minutes. Blend until smooth in a food processor - pour back into saucepan to warm through.
