Americans shun fruits and vegetables

I love fruits and vegetables and they are so easy

to eat or prepare. Fruits have their own packaging,

so all I need do is eat and enjoy. Vegetables are

easy as well. While I watch something on tv or listen

to the radio, I will wash vegetables and for salads

will make ahead and put in the frig. I eat salads

most days.

 

Favorites being French greens with soy cheese,

green beans, kidney beans, garbanzo beans, diced

beets, tomato, green and red onion, shredded

carrots, and a light poppyseed dressing.

 

I also LOVE roasted vegetables like rutabaga, turnip,

parsnips, carrots, potato. I even make a dish where you

slice thin, rutabaga, parsnips,carrots and potatoes and

layer and then drizzle some olive oil and bake until tender.

 

And Egyptian friend gave me a great (IMO) recipe that

involves layers of cooked rice, sauteed yellow onion and garlic,

cooked lentils,sauteed tomato, and cooked small pasta shells.

Salt and pepper. Then bake until hot.

 

And smoothies with fruit and ice cubes are easy to make.
