Fruits have their own packaging, so all I need do is eat and enjoy. Vegetables are easy as well. While I watch something on tv or listen to the radio, I will wash vegetables and for salads will make ahead and put in the frig. I eat salads most days. Favorites being French greens with soy cheese, green beans, kidney beans, garbanzo beans, diced beets, tomato, green and red onion, shredded carrots, and a light poppyseed dressing. I also LOVE roasted vegetables like rutabaga, turnip, parsnips, carrots, potato. I even make a dish where you slice thin, rutabaga, parsnips,carrots and potatoes and layer and then drizzle some olive oil and bake until tender. And Egyptian friend gave me a great (IMO) recipe that involves layers of cooked rice, sauteed yellow onion and garlic, cooked lentils,sauteed tomato, and cooked small pasta shells. Salt and pepper.
