Guest guest Posted February 20, 2007 Report Share Posted February 20, 2007 Since I usually cook by either not using recipes, or else by consulting a bunch of cookbooks and then making up a recipe as I go, here's what I do to make rice pudding. Cook rice in extra water -- double the usual amount or more (1 cup rice, 4 cups water). If I have the ingredients on hand, I cook it in rice milk or soy milk with raisins. Or if I'm using leftover rice, I simmer it in a generous amount of water or soy or rice milk (enough to cover plus an inch or two) plus raisins. After turning off the stove, let it sit for a while, covered, to let the rice become a gooey mass. Finally, add cinnamon, vanilla, maple syrup, dates, or other flavorings to taste. Sometimes when I have leftover rice that's still warm, I put about a cup of rice in a 1.5-cup container, add a small handful of raisins, fill with vanilla soy or rice milk, and put in the refrigerator after I'm finished with kitchen cleanup. Then I have a sort of rice pudding (the warm rice absorbs lots of liquid, and the raisins plump up) with no extra effort. mona wrote, >Anyone have a good rice pudding recipe??
