I told my hubby that I really didn't feel up to going to my in-laws today, and he said if I didn't, then I shouldn't worry about it. Except I figured if I didn't go, my kids wouldn't go (in-laws don't always provide a warm and cozy environment), and then they would not get a Thanksgiving at all. Finally, this morning I decided I'd just throw that tofurkey roast in the fridge into the oven, so that even if I went I'd have had something to eat first. Long and short of it, I ended up making a whole vegetarian thanksgiving meal ... tofurkey, stuffing, mashed potatoes, gravy, corn on cob, cranberry sauce and rolls. It was sooooo much easier than cooking a turkey dinner, for some reason. And it was very good. Half of kids are out of town, so it's just my 13-year old vegetarian and my 18-year old son. They ate with me, and now nobody needs to go to in-laws except hubby ... so I got to have a vegan holiday without complaints. And my 18-year old ... I asked him how it was and he said it was good, and that he really liked it because no animals had to be hurt for it. I know it's just a matter of time before that one converts.
