From the chicagoist Vegan Dinner is a blog that was recently launched to chronicle the attempts of one Chicago couple to eat 365 different vegan meals in 365 days. According to their info page, Ian and Kit have been married and living in Chicago since June of this year. Ian has been a vegan for the past nine years, while Kit has to pass on the vegan lifestyle due to medical reasons. The couple posts their meal findings every Monday, Wednesday and Friday, with each post including a recipe for that day’s meal and a photo of the dish. The two will often pepper the typical food mumbo jumbo with anecdotes about their day. On October 1, their house was flooded and thus they were forced to create a quick dinner (a Healthy Bean and Onion Sautee) while they tried to dry out their living room. The recipes are archived

and organized by the amount of cook time needed for each — 20, 40, 60 and 60-plus minutes. From the looks of it, Ian and Kit are only about 1/30th of the way through their vegan quest, but they have provided some creative recipes thus far.Our favorite has to be the Vegan Mexican French-Fry Bowl (pictured here) — a mixture of spicy black beans with brown rice, fried potatoes and lime. This one falls under the 40-minute category, and although it’s basically a big bowl of starch they do spice it up with some good garlic and cumin flavors.
