These Colorful Kale Pinwheels make an attractive, convenient appetizer that will tempt even junk-food loving partygoers. Fresh kale is sautéed with onion, garlic, and delicious seasonings and rolled into soft tortilla wraps. In addition to its great flavor, kale provides more nutritional value for fewer calories than almost any other food around. Kale is an excellent source of calcium and unlike dairy products, it is not highly allergenic and does not contain any saturated fat or cholesterol. This is an appetizer your guests will love and you can feel good about serving! Ingredients: 1 large bunch kale 1 red onion, diced1 clove garlic, diced2 Tbs. olive oil 1 Tbs. lemon juice3-4 Tbs. Dijon or brown mustard1 package of large whole wheat tortillassalt & pepper (to taste) Directions: Peel kale leaves away from stem with a knife or by hand. In an oiled pan, sauté kale leaves, onion, and garlic until soft. Season with salt and pepper (to taste) while cooking. Drain off excess liquid and sprinkle with lemon juice. Spread tortillas with mustard and cover with kale mixture. Firmly roll up (in jellyroll fashion). Trim off ends and slice into ½ - ¾- inch pinwheels. Lay flat and serve on a platter.
