MIDDLETOWN - While most chefs hide their secret recipes, one Middletown chef is breaking the code and unleashing his recipes on the public. Mark Shadle, owner and professional chef of It's Only Natural, a restaurant serving only natural food products at 386 Main St. in Middletown, put on a cooking seminar for several of his customers and fans of vegan cuisine on Tuesday night. A vegan is a person that does not eat any animal or animal by-products. Vegan food options are becoming more readily available as this eating lifestyle continues to grow in popularity."More people eat this way," said Shadle, who wanted to show people that a meal that could be very "good without animal products." He added that no matter what reasoning may lead someone to vegan-style eating, including religious, health, or ethical, there are healthy and delicious options available. Shadle, who is a vegetarian, said that he started eating this way for health reasons."You do no have to be a vegetarian to eat here," Shadle said. Many of the people who eat at his restaurant are not vegans or vegetarians."Our clientele likes good food," Shadle said, adding that they like light meals or meals that do not have excessive amounts of meat. Shadle, a chef of 14 years, prepared a full course meal for his guests. He made seitan, wheat gluten and Portobello mushrooms en croute, a pastry, with a yellow pepper tarragon sauce, which was the main course. The seitan was a substitute for the meat; it is a protein substance. The soup of the day was Manhattan sea vegetable chowder, and Shadle made a Caesar salad without artichokes and egg yolks. While educating the public, he often gets requests from his customers on how to prepare certain dishes. He feels owners "should give back to the community.Teaching is rewarding to me," Shadle said. He said that this class would not be the last. "I try to do four classes a year," Shadle continued. "I like to educate the public."
