Guest guest Posted August 24, 2008 Report Share Posted August 24, 2008 Lima Garlic Salad 1 10 oz. package frozen lima beans, cooked and drained 1 1/2 cups cherry tomatoes, cut in half 1 medium purple onion, sliced and separated into rings 1 medium green pepper, cored and cut into strips 1/2 cup sliced black olives 1/2 cup olive oil 2 tablespoons lemon juice 1 large clove garlic, minced 1/2 teaspoon salt 1/4 teaspoon basil, crushed In large bowl combine vegetables. Blend oil, lemon juice, garlic, salt and basil. Pour over vegetables, toss to blend. Cover and refrigerate at least 2 hours. Makes 6 to 8 servings.
