I would do it. Guest guest Posted August 20, 2008 Report Share Posted August 20, 2008 Yes, I think I do have a recipe for burger-patties made with blackeyed peas! About a week or so ago, I made my first batch of " bean-patties " ever--at least, the first ones I offered to my DH for a meal-time. I didn't call them " veggie-burgers " , or " bean-burgers " , but " bean PATTIES " --because he LIKES " Salmon-Patties " and I told him these were made " almost the same way " . (Of course, there wasn't salmon in my bean-patties, but that description let my DH know there might be something " familiar " about this food and so he did try it. The very next day or so, our local (it's really " small-town " ) newspaper came out with a published recipe for " bean patties " made with blackeyed peas and brown rice. They called them " Hoppin' John Bean Burgers " , because the 2 main ingredients were what are found in the southern bean-and-rice dish, " Hoppin' John " . I think I saved the recipe for later reference. If I can FIND it, I will post it here! (I read thru the recipe and I think there was possibly a " meat " ingredient. If so, when I find the recipe and post it, I won't put that part in it--as far as I could tell, the patties would be fine with the omission, anyway.)
