The raspberry swirl cheesecake is wonderful and so is the chickpea noodle soup on page 83. Donna I've been smiling lately, dreaming about the world as one. And I believe it could be someday, it's going to come. There are no artificial sweetners used in the recipes either. I highly recommend this cookbook. Judy Cream of Celery Soup - Vegan 2 1/2 c. water 1 t. Mckay Beef Style Seasoning(Vegan) 1 t. McKays Chicken-Style Seasoning(vegan) 1 c. diced red potato, peeled 1 c. onion, diced 1/2 c. chopped celery 4 c. 1/2 -inch celery pieces 2 T. Cornstarch 2 c. unsweetened or plain soymilk 1/4 t. dried marjoram 1 1/2 T. Bragg Liquid Aminos 1/16 t. cayenne pepper In a large sauce pan, bring the water and " beef " and " chicken " seasoing to a boil. Add the potatos, onion, and chopped celery and simmer for 15 minutes. Add the celery pieces and simmer for 15 minutes. Remove from heat. Stir Cornstarch into 1/4 c. of cold water until smooth and then add to pot. Stire well. Blend with a stick(immersion) blender, or pour into a Vita Mix and blend until smooth(will be velvety smooth if done in a Vita-Mix). Blend until smooth. Add the remaining ingredients and simmer until the soup thickens. Stir often. Serve hot.
