Guest guest Posted August 16, 2008 Report Share Posted August 16, 2008 I cut it in 1/2 lengthwise amd scoop out the seeds. Tehn I turn it ipside down in a soup pot and cover with water. I boil it until I can poke thru the skin. Then I take a fork and I lift up the squash strands and place in a plate, toss with good spaghetti sauce and parm. cheese and eat with homemade garlic bread. This is so good and the spaghetti squash is low carb if you need to watch carbs for any reason. My 2 diabetic friends don't miss a big plate of pasta anymore. One friend tosses her spaghetti squash with alfredo sauce. In the recipe files there is a spaghetti pie recipe and I use spaghetti squash for the recipe instead of spaghetti noodles. Karen my name is Portia, you will really enjoy this group.
