Guest guest Posted August 15, 2008 Report Share Posted August 15, 2008 Serves 4 1 - 15 to 19 ounce can black beans, rinsed and drained 2 Tablespoons mayonnaise 1/4 cup fresh cilantro 1 Tablespoon dry bread crumbs 1/2 teaspoon ground cumin 1/2 teaspoon hot sauce tomato slices, lettuce, whole wheat buns In large bowl, with fork coarsely mash black beans, then mixe with mayonnaise until smooth. Stir in cilantro, bread crumbs, cumin and hot sauce until combined. With lightly floured hands shape mixture into 4 3-inch patties. Lightly spray both sides of each patty with non-stick cooking spray. Heat skillet over medium heat. Add patties and cook until lightly browned, about 3 minutes on each side. Guest guest Posted August 16, 2008 Report Share Posted August 16, 2008 I use my VitaMix to mix black beans, onion, bell pepper, wheat germ, spices, and whatever I feel like to create the mixture. Last time I added some more wheat germ after taking it out of the VitaMix to make the mixture less moist. I form the patties and then bake at 350 (convection) for 15 minutes, give or take. (Someone in this group gets credit for the baking suggestion - I forget who, though.) I can then cook them on the grill outside and they freeze great.
