Guest guest Posted August 12, 2008 Report Share Posted August 12, 2008 I only have two kids at home this week so we had dinner with a family that we are friends with. I had a veggie burger, she keeps them for me and the kids had the casserole thing she made. It looked pretty good if you like meats, and I wanted to try a version with no meat. So tonight I did and it was pretty darn good. I was amazed, I cooked it and even my 5yo who usually only eats to make me happy ate 3 bowls of it. So, I thought I would share it with everyone. 1 can cream of mushroom soup Zucchini, I bought the largest one I could find Broccolli, I also picked out the largest head I could find Mushrooms, I bought a package of white ones and used 5 or 6 Cheese, I used what left over cheeses I had, probably at least a cup Soymilk Red pepper flakes Tater tots I poured the soup in a bowl. Chopped up the broccolli and added it to the bowl. Cut the zucchinni in about 1/2 inch rounds (I think) and then quartered the rounds and added them to the bowl. Took the stems off the mushrooms and quartered the tops and added them to the bowl. Add the cheese, mine was shredded. Mix it all up with a spoon and add soymilk a little at a time till everything it coated but not soupy. Add red pepper if wanted. Pour mixture into a dish, I think mine was 2 quarts. Cover the top with tater tots. I put a lid on mine because that is what the dish came with. Put in the oven and bake until it is all bubbly everywhere. I don't know what the temp was because that knob is missing on my stove. Take it out and let it cool. Just the three of us and my kids ate most of it. Probably not the healthiest but it was good.
